At my house growing up, we got Christmas presents from Santa, which were unwrapped and sitting by the hearth on Christmas morning. But it was also common for us to get presents under the tree from Rudolph, Frosty and Mrs. Claus in addition to those from family members. As we’ve grown up, though, we’ve gotten fewer presents from Mrs. Claus and Frosty, but we’ve started getting presents from various elves. This year, under the tree were gifts from “Eloise, the British elf,” “David, the Messianic Jewish elf,” “the Gelf,” who gave me seven bottles of hair gel, and our favorite, “Pedro, the Latino elf.”

I’m telling you what. Pedro out-did himself this year, friends. He gave me several vegan cook books, and immediately upon arriving home this evening, I put one of them to work to make me some baked goods. Cupcakes to be exact. I made my first ever vegan cupcakes, and I have to say it. They. Are. DELICIOUS!! Can I get a witness? Holla!

I made gingerbread cupcakes with vegan butter cream icing (contains neither butter nor cream…discuss). If anyone wants some, I have eight left. But act now! They may be gone by this time tomorrow. Because I might eat them for every meal. Yummmm!!
